Monitor can't hold red.

The red on my monitor fluctuate and eventually disappears. It's not suitable for playing on or showing guests.

This is on my Sega Aero Table by the way.

A faulty red gain or cutoff pot, or a poor solder joint.

Start with the pots. See what happens when you start turning them.

Yeah, red comes back up when I turn the red gain pot. Even if I then return it to its original position. Then it slowly recedes again.

Sounds to me like you found your problem. You can try swapping one of the other gain pots over to make sure.
